6. Mimosa cake
This delicate, light and fragrant cake, garnished like a floral explosion, is reminiscent of the mimosa, a plant that blossoms in Liguria like a triumph over winter, announcing the coming spring weeks in advance. It was created, perhaps by chance, in 1962, when confectionary chef Adelmo Renzi presented it while participating in a confectionery competition in Sanremo. The name of this new creation, made from sponge cake and custard, was meant to pay homage to the city of San Remo and the mimosa flower that coloured the Ligurian coastline. The original recipe is not known to anyone except its inventor.
