WINES DOP

Colli di Luni Rosso has a ruby red colour, varying in intensity, and tends to develop garnet hues with aging. The aroma is delicate and vinous, with a good structure and well-expressed tannins. The taste is dry, refined, and harmonious. It pairs well with polenta, ravioli, and tortellini with ragù. If it’s a Riserva, it complements grilled white meats, thyme-roasted kid goat, and medium-aged pecorino cheese.

Cinque Terre. This wine embodies the finest qualities of the Cinque Terre terroir.

Bosco, Albarola, and Vermentino grape varieties grow amidst the mineral-rich soil and the saltiness of the sea air. Centuries of cultivation have led to the presence of numerous other grape varieties in small percentages, creating a white wine with character. It pairs well with seafood dishes, fish soup, pasta with anchovies, and seafood risottos.

Cinque Terre Sciacchetrà. This wine is made from the same grapes as the dry white (Bosco, Albarola, and Vermentino), which are dried on special mats for at least two months, using a method that makes it unique and famous worldwide.

Colline di Levanto. This designation includes the following types of wine: white, red, and novello. It also allows for a specific varietal designation. The production area of Colline di Levanto DOP encompasses the territories of the municipalities of Levanto, Bonassola, Framura, and Deiva Marina in the province of La Spezia, in the Liguria region. It pairs well with baked or grilled fish.

Golfo del Tigullio Portofino. The Golfo del Tigullio-Portofino DOP, or Portofino DOP, includes the following types of wine: White, Red, Rosé, Spumante, Passito, and Novello. The designation also covers numerous varietal and geographical specifications. It pairs well with seafood appetizers, Genovese minestrone, and lasagna with pesto.

Valpolcevera. A white wine with a pale straw-yellow colour and greenish reflections. It has a delicate but persistent aroma, with hints of herbs and slightly dried wildflowers, along with a subtle note of berries. The taste is dry, fresh, light but lively, with limited persistence. When served chilled, it pairs wonderfully with certain traditional Genovese dishes like *cima* (stuffed veal) and fried anchovies.

Riviera Ligure di Ponente Pigato. Riviera Ligure di Ponente DOP Moscato has a straw-yellow colour that varies in intensity. It offers an intense and enveloping aroma with fruity notes of almond, peach, and citron. On the palate, it has a dry, intense flavour with a slight bitterness and a strong almond aftertaste. It pairs well with *ravioli di magro* (ravioli with a light filling), *corzetti* with butter, risotto with shrimp sauce, and baked sea bream with thyme and sage.

Pornassio or Ormeasco di Pornassio. This wine has an intense ruby red colour and presents a complex and full-bodied profile, with hints of ripe fruit and flowers, along with a light spiciness. On the palate, it finishes with a typical dry and slightly bitter aftertaste. It pairs well with *agnolotti* in meat sauce, young polenta with sausage, stewed rabbit, and soft cheeses when aged.

Rossese di Dolceacqua. This wine has a bright ruby red colour that tends toward garnet with aging. On the nose, it reveals notes of red currant jam and candied sour cherries. On the palate, it is warm and velvety, expressing a certain freshness with delicate tannins. It pairs well with dishes such as rabbit with herbs, goat stew with beans, thrushes with juniper, local cheeses, and stewed kid goat.
