Carparina is a variety cultivated in the Province of Savona. An eccentric variety of ancient origin, passed down with age-old wisdom.

Insights

An interesting aspect is the origin of the name. Many believe it refers to Carpe, a location near Toirano. However, it’s also possible that it could be linked to the hornbeam (Carpino), a tree commonly found in cold and damp environments. The ancient Ligurians were adept at observing resemblances between plants. For instance, the term "giuggiolina" was already in use during the 18th century to describe the Taggiasca variety.

Features

The Carparina tree is a hardy and rather eccentric variety. It grows in the area between Albenga and, at most, Pietra Ligure, making it rare and notable for its distinctive characteristics. It withstands both cold temperatures and the tramontana—the north wind that periodically disrupts the tranquility of the valleys and coastline of western Savona. Its pruning method is unique, passed down over generations through ancient wisdom.

How it's made

It is believed to withstand harsh temperatures well. It can therefore be planted in less sunny and more "wild" areas, as is commonly said in the olive oil world. Its pruning is quite particular, and it is found in an area that stretches from Albenga to Pietra Ligure, inland. It is rarely produced in pure form, except in the Toirano area.
