DOC Cinque Terre and Cinque Terre Sciacchetrà represent a coastal production area that encompasses the municipalities of La Spezia, Riomaggiore, Vernazza, and Monterosso al Mare. Like the flight of seagulls against a poignant fiery red sunset, this region evokes romantic memories of the past, with its terraced vineyards suspended above the sea. The sun, stone, and sea serve as anchoring elements. Its colour is straw yellow, tending towards a golden and luminous hue, with aromas reminiscent of coastal rocks, warmth, and wild fruits. It unfolds with a generous sip that is gently enveloping and savoury, etched on a foundation of salt stone.
Insights
For Sciacchetrà, the grapes are left to wither on special racks in a shaded and ventilated environment for at least two months. Afterward, they are destemmed, crushed, and the dense, sweet must is carefully separated from the skins. The name Sciacchetrà is thought to derive from the words "schiaccia" (crush) and "trai" (extract). From these grapes, only 30-35% is made into wine, which explains the high price of the bottles.
Features
The Grape Variety
The leaves are medium to large, pentagonal, trilobed or quinquelobed, with an expansive growth habit. The bunches are large, semi-compact or compact, elongated, and pyramidal, often with one or more wings. The berries are medium to large, rounded, with a thick bloom and juicy pulp.
The Wine
This white wine is made from Bosco grapes (at least 40%), Albarola, and Vermentino (individually or together, up to a maximum of 40%), as well as other Ligurian white grape varieties (up to a maximum of 20%). It is a savoury wine that pairs well with the seafood dishes typical of Ligurian cuisine. Recently, three subzones of production have been recognised: Costa de Sera, Costa de Campu, and Costa da Posa. The maximum yield for vineyards is 90 quintals per hectare, which decreases to 85 quintals per hectare in the three subzones. The maximum grape-to-wine yield is 70%.
How it's made
Cinque Terre Wine – White DOC
This white wine has a colour ranging from light yellow with greenish reflections to a more or less intense straw yellow. Its aroma is delicate but persistent, with hints of dried field herbs, chamomile flowers, elderflower, and a very subtle marine scent. The taste is dry yet moderately soft, savoury, gently warm, continuous, with a characteristic salty finish.
Alcohol content: 11 - 13%
Serving and Storage
This wine should be served at a temperature of 11°C in tall-stemmed glasses. It reaches its peak within the first year of production. To preserve its qualities, it should be stored lying down in the lower compartments of the cellar, at a constant temperature between 10°C and 14°C.
Perfect Pairing
A dry white wine, ideal for accompanying a variety of seafood dishes such as fish soup, fish stew, pasta with anchovies, seafood risotto, spaghetti with clams, baked anchovies, fried small rockfish, stewed salt cod, baked sea bream or dentex, and swordfish cooked "all'uccelletto" style. These pairings perfectly enhance the savoury aromas of the dishes, with the wine’s refreshing fragrance and salinity complementing the flavours.
