Terrazze dell’Imperiese includes the following types of wine: White (also sparkling), Red, Rosé, White Passito, Red Passito, and Novello. The wine-making, bottling, and aging operations must be carried out within the territory of the municipalities in the province of Imperia, with the exception of historic cellars located in Savona.
Insights
The White wine is particularly suitable for accompanying seafood dishes from the local cuisine. The Red wine pairs well with game, roasts, stews, and cheeses. Historical research has also allowed for delineating the precise boundaries of areas traditionally recognized as ideal, starting from the Intemelie valleys in the west, passing through the central geographic nucleus including the Valle Argentina, reaching Imperiese, the "Comprensorio Dianese," and the upper Arroscia Valley.
Features
The Terrazze dell’Imperiese IGP White wine is of a more or less intense yellow color, with a soft mouthfeel that tends towards fresh and savory sensations. It may also be available in a sparkling version. The Red wine has a deep ruby red color often tending towards garnet, with a savory taste balanced by silky tannins. The Rosé wine presents itself with a pink color, being fresh, balanced, soft, and fruity. The Terrazze dell’Imperiese IGP White Passito wine has a yellow color speckled with golden veins. There is also the Red Passito, which appears garnet in the glass.
How it's made
Terrazze dell’Imperiese IGP Passito wines must be made by drying the grapes on the vine or after harvest on racks in suitable, possibly temperature and humidity-controlled rooms with forced ventilation. The release for consumption of Terrazze dell’Imperiese IGP Passito Bianco and Terrazze dell’Imperiese IGP Passito Rosso wines is permitted starting from the first of December of the year following the harvest.
