How to cook with fire and on chestnut leaves in an ancient village in eastern Liguria. During this unique experience, you will learn how our ancestors cooked ‘sotto il testo’, i.e. inside a cast-iron bell heated over an open fire, which was the traditional oven still in use in the Ligurian mountains. You will be able to try this ancient baking method, learning how the colourful chestnut leaves used as the first baking paper are arranged and discovering all the secrets of this delicious pie that you can also easily make at home. While waiting for the Baciocca to be ready before taking it out of the oven, irresistibly steaming and fragrant, you will also learn how to ‘roll out the dough’ with a rolling pin.
